I got up at 7.30am today. It's a Saturday. AND IT WAS RAINING. That darned body clock of mine.. But I guess I shouldn't complain. I actually like it when I get an early start to my day! Anyway, decided to make full use of the early rise to bake some French EG & Lemon Shortbread biscuits. Earl grey's been on my mind for a few days now, after seeing this and this. I was WAYYY too lazy to do anything that fanciful so I settled for something a little easier.
I didn't have any earl grey tea bags on hand so I had to use french earl grey ones from TWG. Heart a bit pain sia HAHAHA but not like my family would miss the teabags anyway, they never drink tea. Only after I had poured the leaves into the mixture did I realise that they weren't fine enough.
I then painstakingly sifted through the mountain of flour, crushing the leaves with my fingers in what turned out to be an extremely time-consuming process. :'( On a whim, I decided to throw in some lemon zest right before I rolled the dough. A while later, they went into the oven and... voila!
They're really crumbly & they melt in your mouth the lovely way shortbread does. I also found that you should definitely chill your dough for a longer period of time if you want it to hold a nicer, more regular shape.
Some of mine were ugly and deformed because I wasn't patient enough to wait while the dough chilled HAHA oops. (Shortbread #4, I'm sorry but your photo was not strong enough to get you through to the next round of America's Next Top Biscuit. You'll have to go back to the jar, collect your belongings, and immediately return home.)
If anyone is interested (which I highly doubt :p), I got the recipe from here with slight modifications. Overall, I'm really happy with how they turned out. Considering how much I love Earl Grey tea, I might move on to do more recipes like these! Earl grey pound cake anyone?
