These days I seem to be craving chocolate a lot, even more than the copious amounts I normally enjoy. I saw this recipe online and thought it might give me a relatively-healthier chocolate fix. They're not any less sinful than chocolate, but at least they're made without refined sugar or artificial ingredients. Nuts are rather expensive, but I got the dates on sale which made up for it! The best part about this recipe is that it's SO easy. Three main ingredients and you just blend it. I can't believe it's made from all-natural ingredients because it tastes so decadently sinful (and dark chocolatey)!

Lavender and Vanilla Bean Cake
Today, my activity of choice to neglect life and responsibilities was to bake a lavender & vanilla bean cake. I was dying to use the vanilla beans I got from France and Australia because it was kind of a pity to have left them for so long. (I used a recipe from Pastry Affair if anyone is interested) The cake turned out pretty well - if I do say so myself - and the lavender wasn't overpowering in the least. It was also exceedingly gratifying to see the speckled flecks of vanilla beans in the thin coat of frosting. The problem with baking though, is that I take about 4 months to recover from the day-long cake-overdose. :p

Breakfast: Healthy Greek Yoghurt Pancakes
Monday morning, class got cancelled so I pounced on the opportunity to make myself a fancy breakfast! The great thing about this recipe is that it's single-serving: meaning I don't have to make 13 large pancakes and eat them all only to immensely hate myself afterwards. No butter, no sugar, and the key ingredient is all natural greek yoghurt yum! Sliced up a plum to go along with it- I think they may be my new favourite fruit!
